Characteristics of As Caborcas
As Caborcas is a red wine produced by the wineryCompañía de VinosTelmo Rodríguez in the D.O. Valdeorras.
Compañía de VinosTelmo Rodríguez is born from the collaboration between two oenologists, Pablo Eguzkiza and Telmo Rodríguez, with a vast experience in Burgundy and La Rioja.
This "company" makes wines in several Spanish denominations of origin (Málaga, Alicante, Rioja, Rueda, Ribera del Duero, Toro...). In all the areas where it produces wines, the winery always tries to use the local varieties of each region.
As Caborcas is a wine made mainly with Mencía, in addition to Sousón, Grenache, Merenzao, Godello and Brancellao. All the grapes come from a single vineyard of 2.5 hectares that is over 80 years old. It is located at 600 metres above sea level, on the hillside of the river Bibei, on granitic soils.
The harvest is carried out manually, with grape selection in the vineyard. When they arrive at the winery, the grapes are destemmed and macerated in cold before they start the fermentation, which is carried out with native yeasts, in stainless steel deposits at a controlled temperature and in wooden vats. When the fermentation has finished, the wine is aged for 12 months in 2000-litre foudres.

As Caborcas 2015 is a tasty, elegant and intense wine. The aromas of fresh black fruit, notes of undergrowth and elegant hints of toasted wood stand out. On the palate it is voluminous, with balsamic notes that make it lively and lingering. One of the best reds of this denomination of origin in one of its best vintages.
This Denomination of Origin occupies part of the beautiful valleys of the rivers Sil and Jares in the Northeast of the province of Orense. Vineyards line the slopes of the mountains that frame the river valleys and at the bottom of them, occupying floors slate of very good physical condition and adequate fertility, sometimes on steep slopes. The variety of higher quality and prestige, among whites, is the Godello, white wine grape that provides very fine fruity and floral aroma and excellent structure in the mouth. Next to this is the providing variety Tinta Mencia reds, purple, intense and elegant aroma and soft fleshy fruit not without its nerve.
It is safe to say that Telmo Rodríguez has the reputation of being one of the pioneers and best "driving winemakers", that is, winemakers that travel to different areas to produce wines from the same harvest, using only native varieties from their original regions, apart from paying special attention to the recovery of abandoned vineyards. Currently, Telmo Rodríguez, who enjoys being a winemaker more than an oenologist, is known in the wine industry for being one of the promoters of Spanish winemaking.
