Characteristics of Aphros Pan Espumante Rosé
Aphros Pan Espumante Rosé is a natural and biodynamic sparkling wine made by Aphros Wines with the Vinhao variety in Vinho Verde, in the Portuguese region of Minho.
An architect, educator, sculptor and great champion of the Waldorf educational movement, Vasco Croft set up his own winery on the family estate after an unusual revelation with a Buddhist monk. Located in the Vinho Verde region, Aphros Wine is a project that uses biodynamics and permaculture. There are 14 hectares of vineyard planted with local varieties to make natural still and sparkling wines, keeping the terroir at the heart at all times.
Aphros Pan Espumante Rosé comes from a 20-hectare vineyard. The vines are cultivated using biodynamic agriculture with organic treatments and permaculture techniques, always seeking the perfect balance between plants, animals and humans. When the grapes reach optimum ripeness, they are harvested manually.
In the winery, the Aphros Pan Espumante Rosé grapes are firstly pressed and then fermented with native yeasts at a temperature of 12 to 14ºC. Then the wine ages on lees for 2 months in the bottle and is finally disgorged.
