André Beaufort Derrière L'Eglise Brut Nature is a biodynamic sparkling wine made by Beaufort with the Pinot Noir and Chardonnay varieties in the AOC Champagne, in Champagne (France).
The André Beaufort project takes a radical approach to vine cultivation since the owner Jacques Beaufort suffered a serious allergy to herbicides and pesticides. Since then he has been faithful devotee to organic, ecological and biodynamic work. In 1972, they became the second Champagne producer to use 100% organic grapes and they are now leaders in the region’s biodynamic movement.
As the name “Derrière L'Eglise” suggests, André Beaufort Derrière L'Eglise Brut Nature’s grapes come from a single vineyard located “behind the church”. These are old vines planted in the Kimmeridgian soils that are so characteristic of the AOC Champagne. They are cultivated using certified organic and biodynamic agriculture and the harvest is carried out manually at the optimum point of ripeness.
In the winery, they are committed to minimal intervention. Using the champenoise method, the André Beaufort Derrière L'Eglise Brut Nature grapes ferment spontaneously with native yeasts and then the second fermentation takes place in the bottle and without any added sulphur. Then it is racked on its lees for a long period of time before manual disgorging.
André Beaufort Derrière L'Eglise Brut Nature is the result of a natural savoir faire where the whims of Mother Nature are on display for all to see, with surprising results. A pure, mineral and very elegant champagne.
