André Beaufort Ambonnay Grand Cru Brut is an organic, biodynamic and natural sparkling wine made by André Beaufort in the Champagne denomination (France) with the Chardonnay and Pinot Noir varieties.
André Beaufort is one of the leading producers of organic wines. It all started in 1969 when he discovered he was allergic to synthetic products and has been avoiding any sulphur and chemicals that might affect him ever since. He currently owns 6 hectares of Grand Cru classified vineyards in Ambonnay and Polisy, both in the Champagne region.
André Beaufort Ambonnay Grand Cru Brut comes from vines planted in a Grand Cru vineyard in Ambonnay. These are old vines, ecologically cultivated using biodynamic treatments to allow them to maintain their natural balance. The harvest is carried out manually at the optimum point of ripeness.
In the winery, the André Beaufort Ambonnay Grand Cru Brut grapes are pressed and left to decant for 12 hours. Then spontaneous fermentation begins with the grape’s native yeasts in stainless steel tanks. A second fermentation then takes place in the bottle, following the Champenoise method. When it is ready, disgorgement is carried out by hand and expedition liquor based on concentrated grape juice is added (6 to 12 g/L).
André Beaufort Ambonnay Grand Cru Brut is an innovative Grand Cru, but still made using the traditional Champagne method.
