Characteristics of Amontillado Tradición VORS
Amontillado Tradición VORS is a sherry from the D.O Jerez produced by the Tradición winery. This is a single variety wine, made using only the Palomino Fino grape variety.
Amontillado Tradición VORS first undergoes biological ageing under a layer of flor, a family of yeasts which spontaneously develops on top of the sherry. Following this, the sherry undergoes a period of oxidative ageing. In fact, undergoing these two different ageing processes gives the wine a distinct and particular character.
Subsequently, Amontillado Tradición VORS then undergoes another ageing process via the solera method, using containers from Jerez, El Puerto de Santa María and Sanlúcar de Barrameda. Only 4,000 bottles of the sherry are produced per year.
Although the winery was only founded back in 1998, Tradición holds the honour of being the successor of the oldest winery in the Jerez production area. The winery was founded to continue a tradition that dates back to 1650, making this perhaps the most emblematic winery of the region.
Jerez is home to an exceptional culture in winemaking and viticulture, producing an incredible variety of wines. Sherry and the DO. Jerez region are unlike any other wine or region in Spain and symbolise a centuries-old culture and a true art form of ecological tradition. Even today it is fair to say that these wines have not found their equivalent in the world, and are therefore a real asset to the Spanish word of wine.
