Characteristics of Allende Calvario
Allende Calvario is a red wine produced by Finca Allende in Briones, D.O.Ca. Rioja.
In 1986 Miguel Ángel de Gregorio discovers, in Briones, a unique terroir that he fell in love with. This is when he started to buy small vineyard areas with old vines. However, it was not until 1995 that he created his first Allende vintage. From this moment, he focused all his efforts on showing the character and the expressiveness of the terroir in his wines, on extracting all the essence of each one of his vines. This is why Finca Allende, alongside Calvario and Aurus, is one of the first wineries to opt for cru wines (vinos de pago).
Allende Calvario is prepared with 90% Tempranillo, 8% Grenache and 2% Graciano, which are cultivated in one single vineyard area, the vine plot Pago del Calvario, in Briones. This vineyard was planted in 1945, on clay lome soils with stones and gravel. Its surface does not exceed 2 hectares. It is a sustainable, environmentally friendly crop. It follows the natural cycles of the plant, with the use of organic fertiliser and mechanical tilling, and without using herbicides. Harvesting is carried out manually, selecting the grapes before they enter the winery. Once the grape bunches have been destemmed, they are vatted in a French oak barrel. Here, the pre-fermentation maceration stage takes place for 6 days, at 5ºC. It ferments at a controlled temperature, 28ºC for 4 days, carrying out three pumping-over processes every day. Overall, the maceration time with skins is of 20 days. Once the 20 days have passed, it is devatted by gravity and pressed vertically. Malolactic fermentation is carried out inside the barrel. It is left to age for 18 months in new barrels made of French oak from Allier. It undergoes a racking procedure every six months and then it is bottled without filtering or clarifying.
Allende Calvario is an expressive, pure wine, rich in shades, dominated by black fruit compote aroma fused with mineral notes on a light balsamic background. Its supple but polished tannins caress the palate with extreme gentleness. A wine that does not go unnoticed.
