Aldo Viola Saignée Rosato is a natural rosé wine made with the Nerello Mascalese and Syrah native varieties produced by the Aldo Viola winery in the IGT Terre Siciliane.
Aldo Viola is located in the town of Alcamo, in northwest Sicily. An estate with 16 hectares of vineyards cultivated according to biodynamic and organic principles and then used to make natural wines with a strong territorial identity. They produce fewer than 10,000 bottles per year under 4 labels, but the quality is excellent.
Aldo Viola Saignée Rosato comes from vines planted in calcareous clay soil that is rich in organic substance and cultivated using ecological, organic and biodynamic techniques to reveal the best of terroir. The harvest is carried out manually when the grapes reach their optimum ripeness.
The Aldo Viola Saignée Rosato grapes ferment spontaneously with native yeasts in stainless steel tanks and macerate for a short time with skins. The wine is then bottled without being filtered and with a minimum of sulphites.
Aldo Viola Saignée Rosato is a delicious blend of native Sicilian varieties in the most natural style. A pleasant earthy taste with a sharp acidity.
