Aldo Viola Krimiso Catarratto 2017 is a Catarratto variety orange wine made by Aldo Viola in the IGT Terre Siciliane.
Aldo Viola is a family winery in the city of Alcamo, on the northwest coast of Sicily. With 16 hectares of organic vineyards, only the highest quality grapes are used to make the natural wines. A small production of around 10,000 bottles a year across four different labels.
The Aldo Viola Krimiso Catarratto 2017 vineyards are cultivated using the Guyot system and lie at 400 m above sea level. Organic farming methods are used along with organic and biodynamic treatments. The harvest is carried out manually at the optimum moment of ripeness.
When the Aldo Viola Krimiso Catarratto 2017 grapes reach the winery, they are destemmed and begin spontaneous fermentation in steel vats with native yeasts, macerating with their skins for about 5 months in steel tanks. Finally the wine is bottled without being filtered and only a minimum amount of sulphites are added.
Aldo Viola Krimiso Catarratto 2017 is a natural, Mediterranean and pleasantly salty white wine made with traditional methods.
