Characteristics of Agustí Torelló Mata Aptià
Agusti Torello Mata Aptià Macabeo is an ecological, young white wine from DO Penedès prepared by Agusti Torello Mata wineries. This wine is a varietal Macabeo.
The cellars are located in the cava capital, Sant Sadurní d'Anoia, in the heart of Penedès. There is a great diversity of soils and microclimates are present in the area in part due to the proximity of the Mediterranean Sea, they give the wine a special character.
Once harvested, the grapes are pressed in modern pneumatic presses that prevent oxidation. Each variety is vinified separately in small tanks to maintain the original flavour. Fermentation takes place in barrels and the wine is finally aged on its lees for a period of six months.
Agusti Torello Mata, the son of tailors and musicians, showed interest from very young in the world of cava. In 1953 in Sant Sadurní he opened the first wine analysis laboratory, all his life he has led important wineries in the sector. He also founded his own company in 1959, one of the cava wineries of references.
This is now a prestigious family business, run by the four children of the founder of it and Carmen Sibill, who is responsible for maintenance.

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, permitted grapes, experimental grapes, and those that demostrate intrinsic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used! But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from Penedès, since there are so many types of wines and wineries in the region. However, the common denominator of all the wines from Penedès continues to be balance and quality.
