Ad Libitum Monastel is a red wine produced in Rioja by the Juan Carlos Sacha winery in Baños del Rio Tobia, La Rioja.
Juan Carlos Sacha is the person at the helm of the project, with 5.5 hectares of organically cultivated vineyards in the Najerilla valley, La Rioja Alta. He has been one of the driving forces behind rescuing the area’s old varieties and going back to growing wines like this Monastel.
Ad Libitum Monastel comes from a south-facing vineyard planted 560 metres above sea level in the Najerilla valley. The grape is harvested manually, it is destemmed in the winery and introduced to 500 litre barrels where it ferments and is aged for 11 months.
