Characteristics of Abadia da Cova

Abadía da Cova 2011 is a single-varietal of Mencía covered by the D.O. Ribeira Sacra, produced by Adegas Moure in Lugo. The harvest is manual and the grapes are collected in boxes of 20 Kg, then the grapes are selected upon arrival at the winery. They are macerated for 6 days. The must then ferments for 8 more days at less than 28º C and subsequently a malolactic fermentation takes place. The wine is not clarified before being bottled.
Alcohol: 13.0%
Serve at 16ºC
Pairing
Soupy rice, Beans and pulses, Grilled red meats, Stew, Cold meat, Risottos, Mushrooms, Pasta with meat sauce

Tasting notes Abadia da Cova

Sight Intense picota cherry colour with violet rim. Medium-high robe. Clean and bright. Abundant tears shown on the glass. Nose High intensity, very fruity. Powerful aromas of black fruit prevail. Ripe. Licorice tones, accompanied by herbal notes and moist soil. A balsamic, slightly spicy background with subtle floral hints. Taste Shows good attack, light, agile, fruity and smooth on the palate. Very good acidity and some soft tannins. Well-structured, balanced, lively, meaty, tender, and a hint of warmth. Long finish, with a very pleasant and persistent bitter touch that leaves nuances of licorice fruits and fragrant flowers in the retro-olfaction. A round red wine without edges, more subtle on the palate than in the nose.
Sight Red cherry, well covered, brilliant.
Nose Powerful nose clean, attractive, very fruity and distinctive personality. Taste After nose clean and powerful, fruity and floral character. Well built, balanced, smooth, live bait and a point of tenderness and warmth.

D.O. Ribeira Sacra

Winery Adegas Moure

The DO Ribeira Sacra is a region that perhaps paints one of the best pictures of heroic viticulture, having even been awarded recognition by CERVIM, the awarding body for this style of viticulture. The term ‘heroic viticulture’ refers to viticulture in areas that have a topography and soil conditions that complicate the work in the vineyards and make cultivating the vines and harvest a challenge. The region is home to an Atlantic climate, rivers as thermoregulatory agents, low rainfall, slate-schistose and granite soils, small sized plots and vineyards grown on steep slopes. The result is excellent wines with great personalities that truly express the dramatic and exciting nature of the landscape.

It was from 1958 that the Moure family decided to translate the tradition and the ancient knowledge of previous generations in the growth of vines and transformed this idea into the wineries hallmark. That is how Adegas Moure was founded.
