Vallformosa Origen Brut is a cava produced using a blend of 3 different grape varieties; Macabeo, Xarel.lo and Parellada, all taken from the wineries own vineyards which are the oldest in the Cava region.
The harvest is carried out manually and mechanically. The Macabeo grapes are harvested at the beginning of September, Xarel.lo in the middle of September, and finally the Parellada grapes during the first week of October.
As for the winemaking process, the first fermentation takes place in stainless steel tanks at a controlled temperature of 14-16ºC. Following this, the second fermentation follows traditional methods and takes place in the bottle. This cava then spends 12 months ageing on lees.
