D.O. Penedès (Catalonia)
La Salada Tinc Set Ancestral is a sparkling wine produced by La Salada in the Penedés. This is a personal project by Toni Carbo, winemaker at Mas Candí, and his wife Anna.
The grapes used to produce this wine come from vineyards planted by the grandfather of Toni, grown on calcareous-clay soils. The vineyards have always been cultivated in an organic way, i.e without the use of herbicides or pesticides.
La Salada Tinc Set Ancestral is a sparkling wine produced using the ancestral method, using the native varieties of Macabeu and Xarel.lo. The grapes are chilled at around 3-4ºC, with the two varieties left to ferment with their own yeasts until the optimum density for bottling. The final fermentation in the bottle lasts for 8 months.
This is a fruity yet dry sparkling wine, easy to drink and refreshing.
