Jonathan Didier Pabiot Pouilly-Fumé Prélude 2019 is an aromatic white wine with a bouquet full of freshness and white fruit, wild flowers and mineral hints. On the palate it is lively, honest and subtly spicy. A wine with a good entrance, a pleasant mid-palate and a very long finish with smoky notes.

While you might expect a prelude to come before a longer and more important piece, Jonathan Didier Pabiot’s Prélude is wonderfully masterful in its own right. It is named as such because it is the first bottle of the year launched by this young winegrower with an organic soul. Trained by the great Leon Barral in Languedoc, when he returned to his family estate in Pouilly-Fumé with a passion for organic viticulture and strong ideas for the future, his father was not impressed. But six months later, having seen the good results that an organic approach has on wine, the father and son duo finally became one of only three natural winegrowers in the AOC Pouilly Fumé denomination in the Loire (France).

Jonathan Didier Pabiot Pouilly-Fumé Prélude comes from a blend of the three truly remarkable terroirs found on the estate: Kimmeridgian marl, calcareous portlandian and clay-flint on flint. These are vibrant and healthy Sauvignon Blanc vines that, with an average age of 30 years, are cultivated using ecological principles and biodynamic treatments. After the grapes have been manually harvested, a slow fermentation with native yeasts at low temperatures begins in the winery and lasts about 10 days. The wine then spends 5 months on its lees in stainless steel tanks and is finally bottled without added sulphites.

With a vibrant, exuberant and wholesome wine like this, Jonathan Didier is now thought of as one of the great Puilly-Fumé ambassadors, comparable to the late great Didier Dagueneau several decades earlier. This is a prelude to the wines we have yet to discover from this great young winemaker from the Loire region.
