Domaine Gauby is a winery in the area of Roussillon that farms its almost 50 hectares of vineyard organically and biodynamically.

Gauby Calcinaires is fermented with native yeasts and macerated with the skins for a period of 2 to 4 weeks. Of the final wine, 80% is aged for 10 months in concrete tanks and the rest in old oak foudres. It is bottled without filtering or clarifying. Only 5,000 bottles of Gauby Calcinaires are produced.

Gauby Calcinaires is an intense red wine, with body, black and red fruit and touches of undergrowth and toast.
