Gauby Calcinaires Blanc is a natural white wine made from Muscat, Macabeo and Chardonnay grapes from the VDP des Côtes Catalans and produced by Domaine Gauby.
Domaine Gauby is a winery that owns around 45 hectares of vineyards that are up to 125 years old to the northwest of Perpignan. It practises organic and biodynamic agriculture and its philosophy is to respect and integrate with the terroir and its natural environment.
The vineyards for Gauby Calcinaires Blanc are cultivated by pursuing the principles of biodynamics. They are harvested manually and produce around 20 to 25 hectoliters per hectare, a low yield that guarantees a balanced and concentrated grape. Their soils are calcareous, silty and clayey.
To vinify Gauby Calcinaires Blanc the grapes are pressed directly when they arrive in the cellar. The must is then disgorged by gravity at a low temperature to clean it, and to ensure that the fermentation proceeds as desired. It is fermented with native yeasts and without any added commercial yeasts. Lastly, the wine undergoes 8 months of ageing on lees in tanks, and is not clarified or filtered before bottling.
Gauby Calcinaires Blanc is a complex and full white wine. A fresh and mineral wine that is very pleasant on the palate.
