Francis Boulard Les Rachais Brut Nature is a biodynamic sparkling wine made with the Chardonnay variety by Francis Boulard in the AOC Champagne, in Champagne (France).
Grandson of the great Raymond Boulard, Francis Boulard inherited his grandfather’s passion for vines and set up a new project in 2010 with his wife and daughter. His work focusses on biodynamic practices and as a result, he produces powerful and mineral wines that are comparable to some of the great champagnes.
Francis Boulard Les Rachais Brut Nature is made from vines aged over 35 years old planted on the Saint Thierry massif, which is known as the “petite” Montaigne de Reims. These are Chardonnay vines planted in clay-calcareous soils and cultivated according to biodynamic principles without any chemical products.
In the winery, Francis Boulard Les Rachais Brut Nature is vinified using the traditional champenoise method. Firstly, it ferments spontaneously with native yeasts with frequent battonage and then it undergoes a second fermentation in the bottle, spending 60 months on lees. Finally, it is disgorged without adding expedition liqueur.
Francis Boulard Les Rachais Brut Nature is a great Cuvée Blanc de Blancs. A brut nature champagne with power, body and complexity.
