Domaine des Marnes Blanches Chardonnay les Molates Ouillé is a natural Chardonnay variety white wine produced by Domaine des Marnes Blanches in the AOC Côtes du Jura denomination (Jura).
Domaine des Marnes Blanches lies in the French town of Sainte-Agnès. The winery is owned by the young winemaking couple, Géraud and Pauline Frémont. They set up the business in 2006 with 10 hectares of vineyards certified for organic farming, and they emphasise minimum intervention both in the vineyard and in the winery. From their point of view, wine should make itself, they are just there to guide it.
Domaine des Marnes Blanches Chardonnay les Molates Ouillé comes from 35-year-old vines planted on white loam soils. These strains lie 300 metres above sea level and are ecologically cultivated. Chemical fertilisers, pesticides and other synthetic products are replaced by organic preparations made from herbal infusions, sulphur and copper. The harvest is carried out fully by hand.
After a gentle pressing, the Domaine des Marnes Blanches Chardonnay les Molates Ouillé must ferments spontaneously with native yeasts in wooden barrels. It ages in the same barrels for 18 months. Once it has been bottled, it is not filtered or clarified.
