Domaine des Amiel Mounto Daballo is a certified organic and biodynamic red wine produced by Domaine des Amiel according to the principles of natural winemaking. It is a coupage of Cinsault accompanied by Grenache, Carignan and Syrah.
Domaine des Amiel is the small winery owned by the brothers Aymeric and Jordan Amiel in the Languedoc-Roussillon area. It is located in the small town of Montblanc, between Narbonna and Montpellier. The family domaine currently owns 10 hectares of vineyard that it cultivates organically and biodynamically and is certified thus. They work with the utmost respect for the vines and their natural environment, understanding that the wine is produced mainly in the vineyard.
The vineyards for Domaine des Amiel Mounto Daballo are between 20 and 40 years old. Their yields are low, about 35 hectolitres, but produce a grape that is concentrated in terms of aromas and flavours, and very balanced. They are harvested manually and placed in 10 kg boxes.
Once in the winery the Domaine des Amiel Mounto Daballo harvest is destemmed and pressed, and then vatted without sulphites or commercial yeasts being added. It is produced seeking short macerations and the minimum of tannins so that the wine is fresh and fruity. The pressed wines obtained after the alcoholic fermentation are not added to the wine but will rather form part of other cuvées. The final wine is aged in tanks for about 6 months and bottled in March without being filtered or clarified.
Domaine des Amiel Mounto Daballo is a fresh and lively natural wine with limited production. Only around 2,700 bottles are produced.
