Domaine des Amiel Farem Tot Petar is a natural organic andbiodynamic monovarietal Syrah rosé wine produced by Domaine des Amiel.

Domaine des Amiel is the small winery owned by the brothers Aymeric and Jordan Amiel in the Languedoc-Roussillon area. It is located in the small town of Montblanc, between Narbonna and Montpellier. Their 10 hectares of vineyards are currently cultivated ecologically and biodynamically and are certified as such. They work with the utmost respect for the vines and their natural environment, understanding that the wine is produced mainly in the vineyard.

The Syrah vineyards forDomaine des Amiel Farem Tot Petar produce a low yield of about 30 hectolitres per hectare, and their grapes offer intense fruit aromas and are very balanced. They are harvested manually so that the grape arrives whole and intact in the cellar.

Once received, the Domaine des Amiel Farem Tot Petar harvest is pressed directly and cold-racked by gravity for a few hours so that the must is clean of impurities and the fermentation can develop properly. It ferments at a temperature of about 17-20ºC to preserve and extract fresh aromas from the grape and finally, before the fermentation ends, the wine is bottled so that fermentation continues slowly in the bottle. Before going on the market, the wine is disgorged to remove part of the sediments.

Domaine des Amiel Farem Tot Petar is a sparkling wine with a very limited production. Only about 4,200 bottles are produced. The name of the wine comes from the revolutionary cry in Occitan that the Languedoc vignerons exclaimed in the Languedoc winegrowers Rebellion at the beginning of the 20th century.
