Domaine de Villaine Rully Les Saint-Jacques is a monovarietal organic Chardonnay wine from the AOC Rully produced by Domaine de Villaine.
Domaine de Villaine is a winery installed in Bouzeron, the first village of Côte Chalonnaise, in the south of Beaune, between Santenay in Côte d'Or and Rully and Mercurey in Côte Chalonnaise. Its vineyards are found mostly on slopes located between 270 and 350 metres above sea level, on poor soils with a high limestone content. To make great wines, it seeks to ensure that its grapes ripen optimally and enjoy perfect health conditions, and to do so has cultivated organically with certification since 1997.
The vineyard for Domaine de Villaine Rully Les Saint-Jacques is located at the foot of a slope, facing east, just below Clos Saint-Jacques, one of the most famous Premiers Cru in Rully. The strains were planted in 1990 and were selected from old strains of medium yield Côte-d'Or.
The Domaine de Villaine Rully Les Saint-Jacques harvest is pressed gently and slowly so that the resulting must is clean and free of astringency. It ferments in barrels, foudres and vats and then undergoes a few months of ageing to ensure that the wine has more body and gains complexity and volume.
