Domaine de Fontbonau Les Chaux de Fontbonau is a red wine made by Domaine de Fontbonau in Côtes-du-Rhône (France) with the Garnacha and Syrah varieties.
Domaine de Fontbonau was set up in 1997 by two prestigious winemakers, François Pinault from Château Latour and Jérôme Malet from Domaine Sarda-Malet. Their operation is built on organic farming methods, a rigorous study of terroir and traditional winemaking. They have a total of 42 hectares in the prestigious Côtes-du-Rhône region, 14 of which are planted with the region’s star variety: Garnacha.
The Domaine de Fontbonau Les Chaux de Fontbonau vineyards are planted in sandy loam soils and fine clays. These are low-yield but high quality vineyards that reveal the full expression of the terroir through sustainable and ecologically certified agriculture. When the grape reaches its optimum ripeness, it is harvested by hand.
In the winery, the Domaine de Fontbonau Les Chaux de Fontbonau grape is received, destemmed and pressed. Every process is carried out with minimum racking thanks to the use of gravity in the construction of the winery. The must then goes through a cold pre-fermentation maceration and then fermentation and post fermentation maceration for 20 to 30 days with treading and pumping over. Before being bottled, it ages in the barrel for a year.
