Celsus is a single-variety Tinta de Toro wine made by Bodegas Vetus in the D.O. Toro (Castilla y León).
Owned by Artevino, the group that also owns Bodegas Orben, Bodegas Villacreces and Izadi, the Bodega Vetus project is run by the Antón family in Zamora. With 20 hectares planted with the Tinta de Toro variety and a modern, newly built winery, they have managed to keep up with the times without leaving behind the essence of the D.O. Toro.
Celsus comes from a very old, pre-phylloxera estate called Camparrón in Morales. Facing north-south and lying at 700 metres above sea level, the vineyard is about 1.3 hectares with vines planted on sandy loam soil. These vines are cultivated using traditional agriculture and the harvest is manual.
After the manual harvest, there is a double selection process and the Celsus grapes are destemmed to ferment in conical 3000-litre tanks. Malolactic fermentation then takes place in new French oak barrels, where the wine ages for 14 months. It is bottled without clarifying or filtering.
Celsus is complex, elegant, limited production wine, and the flagship product from this winery. A great red created to show the full essence of Toro in its most modern interpretation.
