Casa Belfi Colfondo Prosecco is a natural sparkling wine made with the Glera variety in Veneto by Casa Belfi.
Located in the town of San Polo di Pieve (Treviso), Casa Belfi was founded in 1999 with the aim of reviving ancestral winemaking. They also wanted to do this using organic and biodynamic methods. This careful work, led by Donadi and producer Albino Armani, results in low yields in the vineyard and minimal intervention in the winery.
The Casa Belfi Colfondo Prosecco vineyards are grown according to biodynamic and organic principles. With a maximum of 6,666 strains per hectare that are pruned using the Guyot method, they are looking for a low yield in the vineyard. No chemicals are used and they work with natural and green fertilisers. The harvest is carried out manually.
Casa Belfi Colfondo Prosecco is vinified in the winery following biodynamic principles too. The grapes are first pressed gently and the must is clarified by decantation. Fermentation is carried out with native yeasts in stainless steel tanks at a controlled temperature. The wine is left to stabilise at low temperatures and bottled unfiltered.
Casa Belfi Colfondo Prosecco is a natural and biodynamic sparkling wine that although cloudy at first sight, on the palate it is light, fresh and clean with dominant fruit.
