D.O. Cava (Catalonia)
Ars Collecta Blanc de Blancs is a sparkling wine Brut Reserva made by the Codorníu winery with the typical white varieties of the D.O. Cava and aged underground at a constant temperature for 35 months.
The Codorníu Raventós group has a legacy of five centuries behind it. A considerable know-how that enables it to produce expressive and internationally known cavas. Proof of this can be found in Ars Collecta Blanc de Blancs, a Reserva cava that is the result of the experience and exhaustive knowledge of the vineyards. On the one hand, the predominant Chardonnay variety is obtained from the continental climate of Costers de Segre (Lleida) and on the other hand, the Xarel·lo and Parellada varieties, coming from the Mediterranean climate of the central area of Penedès.
The harvest of Ars Collecta Blanc de Blancs starts at the beginning of August; a harvest that is performed at night to avoid high temperatures and possible oxidations. Once in the cellar, the grapes are gently pressed in a pneumatic press and the must is fermented in small batches at a constant temperature of 17ºC, with a small percentage being vinified in French foudre to ennoble the cava. After the coupage it is stored in the cava for 35 months. Once ready, sediment deposited during all this time is removed by riddling and disgorging the bottle. Liqueur d’expedition is then added and the bottle is capped with a cork stopper.
Ars Collecta Blanc de Blancs has all the freshness and acidity that the Xarel·lo and Parellada provide, and all the unctuousness that the Chardonnay variety offers. A complex, elegant, small and persistent bubble ensures a long life in the bottle.
