Adorado de Menade is a fortified wine made with the Verdejo and Palomino varieties, produced by the Menade winery in the VT de Castilla y León, Spain.

Adorado de Menade is a wine that tells a story, at its heart is an ancient tradition of wines aged under a yeast cap, and in its essence lies the work of grandparents, parents and children who year after year fed it with new wine to preserve this essence of life.

The solera came about through a strictly manual harvest that was transported in mule carts. The clusters go through a vertical mechanical press dating from 1900 to produce the musts. The must ferments with native yeasts and the resulting wine is topped up with wine alcohol before going on to oxidative aging. This is where, already in the barrels, the wine spontaneously develops a layer of yeast known as a yeast cap that usually emerges in the spring and protects the wine from oxidation, giving it interesting organoleptic properties.

When the cap disappears, oxidative aging begins in a soleras and criaderas system. The oldest surviving solera dates back to 1967 and it was not until 2018 that the first extraction was carried out with the aim of restarting the traditional criaderas and soleras system.

This artisan process gives Adorado de Menade its personality. It is bottled “en rama”, which means without filtering or clarifying. It is a “stale” style wine that contains a story and a feeling in every sip, a Sanz family feel that all wine lovers can now enjoy.

The Menade winery has one thing certain: you have to give back to nature what man has taken from it. They cultivate the Verdejo and Sauvignon Blanc varieties working in harmony with the environment, making use of the resources it provides. They encourage biodiversity and the insect population, they use no chemical treatments, instead relying on a green cover and a native system of mobile trees, planted on trailers, to improve the biodiversity in the vineyard. All of this work results in organic wines that are able to convey the full strength and personality of this region.
