John Travolta was at the pinnacle of his career in the late '70s, grooving to the beats of "Grease" and "Saturday Night Fever". He seemed unstoppable, but the '80s arrived and the film industry turned its back on him, consigning him to near oblivion. It took Quentin Tarantino to notice him once more and offer him the role of Vincent Vega in "Pulp Fiction" for audiences to remember his talent and legendary status. A similar fate befell the garnacha grape in the heart of La Rioja. For generations, it was a crucial variety in the region, cherished for its fruitiness and smoothness, until the market sidelined it in favour of other varieties. However, time eventually restores everything to its rightful place. With patience and the conviction of those who know the land well, this grape has experienced its own triumphant return, proving that its ability to captivate the world had never vanished; it was merely awaiting the opportune moment to shine once more.

From the legendary Barrio de la Estación in Haro, within the DOCa Rioja, Bodegas Bilbaínas revives this historic essence through its Viña Pomal Vinos Singulares Garnacha collection. The wine originates from a meticulous selection of old vineyards scattered among the winery's regular suppliers, plots situated over 600 metres above sea level. At these elevated heights, the vines find the fresh air and temperature contrast necessary for slow maturation. This climatic balance allows for the harvesting of healthy and ripe grapes, the result of attentive cultivation and a manual harvest carried out in small boxes to protect the integrity of each cluster.

For the production of Viña Pomal Vinos Singulares Garnacha, the winery employs a respectful process focused on highlighting the grape's natural freshness. Initially, a cold pre-maceration is conducted, chilling the grapes before fermentation to extract primary aromas and colour without harshness. The alcoholic fermentation, the process in which yeasts convert the fruit's sugars into alcohol, is triggered spontaneously with indigenous yeast. During the maceration, which lasts only 10 days, a portion of the stems is included, the stalk or vegetal structure of the cluster that imparts freshness and aromatic tension. Subsequently, the malolactic fermentation takes place in French oak barrels. The ageing occurs over 10 months in 500-litre French oak casks, large vessels that allow the wine to round out without masking the fruit, completing its cycle with a minimum of one year of bottle ageing before being released to the market.
