Chavy is one of those names that resonates powerfully in Bourgogne, especially in Puligny-Montrachet, where wine is not just a profession, but a cultural heritage passed down through generations.
Paul Chavy epitomises the new generation of a family deeply rooted in the realm of Bourgogne's fine wines. Upon joining the family domaine, Domaine Jean-Louis Chavy, Paul became an active part of a six-generation legacy built on excellence, absolute respect for the terroir, and meticulous, uncompromising winemaking.
However, far from being content with merely continuing the story as it was written, Paul felt the need to lend his own voice. In 2020, he made a bold decision to embark on his personal project, a solo venture that allows him to express his sensitivity, his interpretation of the vineyard, and his contemporary vision of Bourgogne wine. This project does not break with tradition but reinterprets it with a modern, fresh perspective, acutely aware of the balance between past and future.
In crafting Paul Chavy Pommard 1er Cru Les Grands Epenots, Paul Chavy applies the same rigour and discipline he learned at the family domaine. It all begins in the vineyard, at Les Grands Epenots, with a meticulous selection of pinot noir grapes, always prioritising quality over quantity. The viticultural work focuses on respecting the identity of each terroir, aiming for optimal ripeness that preserves freshness and aromatic expression.
In the winery, intervention is minimal to allow the wine to express itself authentically. Fermentation is conducted with utmost control, attending to every detail to preserve the fruit's purity.
