About The Juice Asylum Il Terzo Grado

When we talk about asylum, we are referring to some form of shelter or protection. It is with this sense that Alessio Guidi, an unconventional winemaker from Tuscany (Italy), embarked on his personal project in 2016 under the name The Juice Asylum. A winery that embraces the finest clusters with the aim of expressing the terroir in the most free and natural way, without restrictions or manipulations. In other words, with an approach that reflects a profound respect for nature and individuality, both in the vineyard and the winery, where experimentation and exploration are the order of the day.

This is evident in The Juice Asylum Il Terzo Grado, a wine that seems to have undergone a "third degree" interrogation for how well it reflects its place of origin. Made with the sangiovese variety, along with other varieties like mammolo and alicante, the vines are cultivated under biodynamic certification and harvested manually at the optimal moment of ripeness. In the winery, half of the sangiovese undergoes maceration with the skins for 5-6 days, while the other half goes through a brief maceration in the press. The other varieties are co-fermented semi-carbonically and then blended with the sangiovese. All fermentations occur spontaneously in stainless steel tanks, and afterwards, some batches age in used oak barrels while others in stainless steel tanks for 6 months. Once the different wines are blended, they are bottled without clarification, without filtration, and with only a small dose of sulphur.

In favour of minimal intervention and maximum transparency, The Juice Asylum Il Terzo Grado manifests with unparalleled authenticity. A true radiography of the Tuscan terroir, capturing the essence of the soil and climate in every sip.

The Juice Asylum Il Terzo Grado 2022 is a juicy and light red wine. On the nose, it offers aromas of cherry, violet, and blackcurrant. On the palate, it is lively and vibrant, with a swirl of red and black fruits. It is juicy and bright, with softly sticky tannins and a fluid profile that makes it very easy to drink.
