In the heart of Sorbara, between the Secchia and Panaro rivers, still stands the winery built in 1926 by Achille (the grandfather and first generation of this enterprise), where Paltrinieri Lambrusco di Sorbara LaRiserva is crafted, a sparkling rosé born under the Charmat method.
For this family, lambrusco di sorbara is the true treasure of this land. Beyond fashions and international varieties, Paltrinieri has managed to overcome fleeting oenological trends, consistently cultivating and betting on this variety, working daily to bring out its best. In their case, lambrusco di sorbara grows on 15 hectares of vineyard on silty and sandy, cool soils, rich in organic matter. In these lands lies the Cristo vineyard, where the grapes for Paltrinieri Lambrusco di Sorbara LaRiserva are harvested.
With about 120 quintals per hectare, Paltrinieri Lambrusco di Sorbara LaRiserva is crafted. Respectful vinifications with minimal intervention are the style followed at the Paltrinieri wineries. In the case of Paltrinieri Lambrusco di Sorbara LaRiserva, pressing is done gently, making the most of the free-run juice. This batch, resulting from the first pressings, stands out for being finer and more delicate, of higher quality. After alcoholic fermentation, where the base wine is obtained, Paltrinieri Lambrusco di Sorbara LaRiserva re-ferments in autoclaves, following the Charmat method (also known as the Martinotti method, in honor of its discoverer). Finally, after 10 months on the lees, Paltrinieri Lambrusco di Sorbara LaRiserva will be ready to be enjoyed.
