Indomable is a sparkling Corpinnat that captures the essence of freshness and vivacity. Upon uncorking, it reveals aromas of green apple and citrus, intertwined with subtle hints of ripe pear. On the palate, its fine and persistent bubbles dance with a balanced acidity, offering a crisp texture that refreshes the palate. Its sweetness is barely perceptible, allowing the fruity profile to shine clearly, leaving a clean and pleasant impression after each sip.

About Indomable

Indomable is a sparkling wine produced by the winery Mas Candí in Avinyonet del Penedès (Alt Penedès).

Mas Candí is a winery built in 2006 with the aim of producing its own wines from vineyards planted by their grandparents.

With the utmost respect for the environment and seeking harmony with the landscape, they work organically with native grape varieties, reviving almost forgotten Catalan grapes.

Mas Candí boasts over 55 hectares of its own vineyards situated at the entrance to the Garraf Massif Natural Park. Thus, they benefit from diverse terroirs, altitudes, and microclimates to vinify the different grape varieties under the most favourable conditions. Indomable is a sparkling wine made with xarel·lo and sumoll from their own vineyards planted on clay-limestone soils with gravel.

Following a hand harvest, the first alcoholic fermentation begins with native yeasts. Before the second fermentation, it rests for 6 months on its lees. Malolactic fermentation does not occur. Before disgorgement, the wine undergoes a second fermentation in the bottle and a minimum ageing of five years. No dosage is added.
