From one of the most avant-garde wineries in the D.O. Rueda—where experimentation with materials is a constant—comes the most classic verdejo: El Lagar de Moha Sapientia Sauvignon Blanc Ecológico.
From El Lagar de Moha, the first winery in the designation certified as organic, comes this young, organic, and vegan white wine that embodies the purest expression of northwestern Spain. In this region, with a rich winemaking tradition, the soils are predominantly composed of pebbles, poor in organic matter, with a limestone and clay subsoil. While water drains easily on the surface, it is retained below, becoming a significant reservoir that greatly aids during the heat, especially in the very dry and hot summer months. In this regard, and considering the challenges of working the land without the extra help of chemical products, the remarkable efforts of its owners, Alberto Moro and Ángeles Ortega, must be highlighted. All tasks are performed manually, including the harvest, and the vineyards (spread between Rueda and Nava del Rey) are cultivated organically.
The other half of El Lagar de Moha Sapientia Sauvignon Blanc Ecológico is crafted in the winery, with spontaneous fermentations using indigenous yeasts that were already present on the grape skins. This detail imparts El Lagar de Moha Sapientia Sauvignon Blanc Ecológico with its distinctive character, making it a unique wine in the world. Finally, after a very brief aging on its fine lees, El Lagar de Moha Sapientia Sauvignon Blanc Ecológico is bottled following a slight filtration with bentonite.
More than just a simple wine, El Lagar de Moha Sapientia Sauvignon Blanc Ecológico is one of the most admirable and committed offerings you can find.
