About Morasinsi Picco della Vigna
In a secluded cove on the Costa Brava, the chef Ferran Adrià once revolutionised the culinary world from the kitchens of El Bulli. What began as classic Mediterranean cuisine evolved into a genuine factory of edible ideas. Techniques such as spherification, freeze-drying, and the use of liquid nitrogen were born there, elevating humble dishes—like suquet de peix or tortilla de patatas—into ephemeral works of art, designed to burst in the mouth and linger in memory. Today, his legacy remains vibrant and evolved at Disfrutar, the Barcelona restaurant of his protégés, where surprise is the menu and creativity, a creed. A "tortilla" might arrive as encapsulated foam, and a tomato explode with flavour... without being a tomato.
The Mediterranean cuisine remains, but dressed in the space suit of innovation. And while the cuisine soars, the wine... takes root.
In the heart of Murgia, Puglia, in southern Italy, two young winemakers—Morasinsi—have chosen to reinterpret another ancient tradition: that of wine. Like Adrià with his dishes, they begin with the essentials: the land, the grape, time. Yet they are not content to follow inherited recipes: their vision marries the ancestral with the experimental, always with profound respect for nature.
Because Morasinsi is not just a name. It is a declaration of intent: "M" for Murgia, the mother earth that embraces their vineyards and nourishes them with warm, mineral-rich clay soils. "Ora," the exact time each wine needs to find its voice without being rushed. "Insi," from insieme (= together), evokes the harmonious coexistence of vines, insects, spontaneous plants, and humans.
One of their most emblematic wines, Picco della Vigna, is born from old vines of nero di Troia, a noble and often misunderstood grape. In its production, there is no haste or artifice. First, the grapes ferment in concrete with native yeasts, then rest in amphorae and barrels, and finally, they mature in the bottle until achieving harmony, without fining or filtering.
And here is where the circle closes. For while Ferran Adrià reinvented a stew, Morasinsi bottles landscape, climate, and soul. Where one transformed the dish, the other preserves the wine in its most sincere form. Here, there are no foams or nitrogen. In Picco della Vigna, there is depth, character, and memory. And that, too, is innovation.
