Còsmic Gratitud Blanca is a white wine without denomination of origin produced by Celler Còsmic Vinyaters in Penedés (Barcelona).
Salvador Batlle founded this winery with the philosophy of preservation of the surroundings, respect for the power of the land, and minimum human intervention in the production of wine. He carries out winegrowing based on biodynamic principles.
The project Celler Còsmic Vinyaters makes wine in two very different areas:
- La Serra del Montmell (Baix Penedés), with foreign varieties adjusted to this region.
- Agullana (Alt Empordà): native varieties of the Ampurdán.
In total, this winery works with 5.5 hectares, using organic and biodynamic agriculture. All their wines are of a single-variety, made with minimum intervention and therefore respecting their natural origin, and expressing the strength of the variety and the personality of the terroir.
Còsmic Gratitud Blanca is a wine made from Sauvignon Blanc from a single plot certified as organic, El Coll d’Olivera, located at 600 metres of altitude on red clay and calcareous, very compact soils.
The grapes are manually harvested and placed in 10-kg boxes. Once they arrive at the winery, they macerate for 4 days. After this, they ferment in several containers: 20% in 220-litre amphorae, 30% in 500-litre chestnut wood barrels, and 50% in stainless steel deposits. When the fermentation has finished, they remain in contact with their lees for 3 months in the same deposits. After the final coupage, the wine is bottled without filtering.
