Features
This toasted wine of Ribeiro is a kind of traditional Ribeiro wine very popular in the late nineteenth and early twentieth century.
It is a sweet white wine made of grapes manually harvested and very carefully selected. The grapes are immediately moved to the passerillage section where they are hung cluster by cluster without touching each other. This process takes three months during which every 15 days moldy grapes are cleaned in order to prevent the spread of rottenness. After being dryed, grapes are taken to the winery where, after a soft crushing, they are very gently pressed. The must obtained was brought to the warehouse where after a soft crumpled very gently pressed. The must obtained stays in Allier French oak barrels for fermentation over a year. It is subsequently decanted and put into the barrels again where it rests on fine lees for a minimum of 18 months. After that, the wine has already completed a period of at least 3 years in the barrels. Finally, the wine stays in the bottle at least for three months.
Very limited production: 1,000 numbered bottles.
Color
Intense honey colour. Clean and bright. Dense tear.
Nose
Aromatically, this toasted sweet white wine is elegant and refined. Presence of wood with hints of candied fruit (especially apricot) and spices.
Flavour
Amazing wine, with a good contrast between sweet and sour notes. Wide attack. Fleshy, dense and velvety mid palate. Fruity taste with presence of hints of honey, candied fruit (the notes of apricot return) and nuts. Long and very persistent.
