Characteristics of Tantum Ergo Brut Nature Pinot Noir Rosado

Tantum Ergo Brut Nature Pinot Noir Rosado is a cava from the appellation of origin (D.O) Cava by the winery Hispano-Suizas. This winery is located in Requena, a town in the province of Valencia.

Tantum Ergo Brut Nature Pinot Noir Rosado is 100% produced from the varietal Pinot Noir. The vineyards are rich in soils of calcareous-clay.

The grapes are harvested manually in boxes that hold up to 15kg in the mornings, this is to maintain an optimum temperature on its arrival to the winery.

With the grapes in the winery, a rigorous selection by hand is performed and then the grapes are destemmed and crushed. After a cold maceration process at 0ºC, for 2 hours. The must is decanted for 24 hours and only the clean part of the must is fermented in new oak American barrels that can hold 400L at 16ºC.

The second fermentation is done in the bottle at a constant temperature of 14ºC. Lastly, the wine is aged on its lees for 15 months and then disgorged manually.

Sight Pale pink Nose Good aromatic intensity with a presence of mature red fruit alongside spicy and toasted notes. Taste A wide and pleasant opening. Creamy with fruity memories. Good acidity. Long finish.
Sight Pale pink Nose On the nose it has powerful red fruit aromas as well as roasted, dry fruit, sweet spices and vanilla notes. Taste On the palate it is broad and creamy with notes of sweet spice. A long finish and well integrated acidity.

Winery Hispano-Suizas

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
