Features
One of the finest and most amazing champagnes.
It is produced by Bollinger only in exceptional vintages. It is made of grapes from the Grands Crus and Premiers Crus (a total of 17 crus). It is elaborated with the "cuvée" (the best juice from the press), whose first fermentation takes place in 5-year small oak barrels of no more than 400 l, allowing the increase of the aromatic complexity and the ageing potential. This is a complete exception in the production of Champagne and has become the emblem of Bollinger Champagne. The second fermentation and ageing is conducted with a cork (another difference) to ensure freshness. This procedure is conducted in underground cellars for a minimum of 5-6 years. After disgorging, the champagne is left to stay for three additional months.
Color
Yellow with golden reflections. Clean and bright with very fine and continuous bubbles which form a good ring on the surface.
Nose
Intense, rich and complex aromas. A whole range of aromas, from ripe white fruit with notes of pastry, nuts and butter to citrus notes that provide it with freshness. These notes give way to subtle touches of smoky, spicy,... A large set of scents.
Flavour
Pure elegance. Refined, sensual, delicate, with ripe fruit and citrus, an excellent acidity that provides it with a great freshness, which contrasts with the creaminess in its mid palate. Well-integrated carbonics. Very long and very persistent finish.
An elegant and round Champagne. A great pleasure for all senses.
