HISTORY
Bodega Quinta Sardonia was founded in 1998 by a group of friends that were fascinated by the world of wine. They were advised by two oenologists: Jérome Bougnaud and Peter Sisseck, the latter being the creator of the world famous Pingus.
The friends were inspired by the French concept of the "terroir:" absolute respect for nature and the highest authenticity to soil. In 1999 and 2000, they planted 20 hectares of vines according to the principles of biodynamic agriculture.
PHILOSOPHY
All grapes used by Bodega Quinta Sardonia are from the winery's own vineyard, a 20-hectare estate on the right bank of the River Duero, 700-800 metres above sea level. There are several varieties of soil on the estate: from those rich in limestone, to those containing marl and plaster on the Southern hillside.
The grapes are farmed using biodynamic agriculture principles. The winemakers use their own compost and a vegetative cover is applied on the soil. The lunar cycles are respected, and plants and flowers from the surrounding environment are left alone. This helps strengthen the biodiversity of microorganisms and insects, in turn benefitting the vines' healthy development.
Apart from the autochthonous Tinto Fino variety, another six are produced, adding complexity: Cabernet Sauvignon, Syrah, Petit Verdot, Malbec, Merlot and Cabernet Franc.
The varieties are mixed together before fermentation. The barrelling is carried out via gravity flow. This maintains the grapes as pristine as possible before fermentation, which takes place spontaneously with autochthonous lees from the estate.
The Quinta Sardonia ages in new French oak barrels intended exclusively for this wine. However, for the Quinta Sardonia QS2, ageing takes place in concrete eggs.
