Celler de Capçanes is a winery in the D.O. Montsant, named after the town where it's located. It's not very common for a winery to have the name of a town, but Celler de Capçanes is not a normal winery. It's a cooperative that was founded in 1933 bringing together 125 members.

HISTORY OF THE WINERY
Before joining the D.O. Montsant, Celler de Capçanes belonged to Falset, a sub-area of the D.O. Tarragona well known for producing wine for sale in bulk.
In 1933 several families from the town founded Capçanes cooperative, allowing them to offer huge volumes of bulk wine at very competitive prices.


In 1991, with the arrival of winemaker Angel Teixidó, the cooperative started to make high quality wines aged in barrels.


This would be a big change for the cooperative, but nothing could compare to what would happen 4 years later.
In 1995, after a meeting with Barcelona's Jewish Community, Celler de Capçanes was commissioned to make make Kosher wine. A wine made respecting the precepts of the Jewish religion and therefore suitable for consumption by its community.


It took a large investment by the cooperative to build new and modify existing facilities and thus adapt to the separate vinification of small batches of grapes selected by the rabbi.
The members of the cooperative had to endorse the credit with their lands and homes, a gamble that would ultimately pay off, since its Flor de Primavera has been recognized for several years as one of the best kosher wines in the world.


As of 2001, with the creation of the D.O. Montsant, Celler de Capçanes belongs to this new denomination.

PHILOSOPHY OF WORK
Capçanes has a wide range of different soil types, allowing them to produce different wines that reflect the individuality of each terroir.
Limestone offering fresh and subtle wines. Slate bringing lots of mineral notes. Clay making the vines suffer, resulting in wild wines. And finally soils in a honeycomb pattern with lots of sand, allowing the roots to grow deep where calcium can be found, resulting in simple, easy to drink wines.


The sum of all the grapes used in the winemaking processes amounts to 250 hectares of vineyards between 30 and 95 years old from the different members of the cooperative.


The production of kosher wines is subject to strong restrictions set by Hebrew law.
The vines used to make kosher wine must be at least 4 years old.
The whole production process must be carried out exclusively by Jewish people. The fermentation tanks and all the material necessary for the wines' production must only be used for kosher wine.
No one unauthorized by the Torah is allowed into physical or even visual contact, with the wine. Not even the winery's oenologist. During the production process, the Rabbi becomes the hands and eyes of the oenologist.
For example, during the ageing of the wine, the winery keeps one barrel that is not fit for making kosher wine, and this barrel contains the same wine as the other kosher barrels. This barrel allows the winemaking team to perform the necessary analysis, so that when they need to do something to the wine, they call the Rabbi and explain to him what must be done and how to do it.
BODEGA CELLER DE CAPÇANES WINES
When talking about Celler de Capçanes wines, we have to mention the kosher wines. For several years Peraj Ha'abib has been considered one of the three best kosher wines in the world.
Flor de flor de Primavera, its older brother, is an excellent fresh, elegant and very delicate wine.
Like non-kosher wines, Celler de Capçanes produces a line of young wines. Mas Donís Rosado, Mas Donís Blanco and Mas Donís Tinto.
Wines aged for a short amount of time in the barrel like Mas Collet and Lasendal. Wines from plots of land like Costers del Gravet or Vall del Calàs. And, finally, Pinot Noir 5x and Cabrida. Two great complex and very expressive D.O. Montsant wines.
