Manuel Garcia, known as "Manuel Costiña" (1980), is the manager of this special restaurant located within the province of A Coruña. Along with his sister, he represents the third generation at this restaurant founded by their grandparents 75 years ago. Since his childhood, Manuel grew surrounded by stoves.
The Restaurant El Fogón Retiro de Costiña is more than a restaurant. When visiting it, there is a complete protocol to follow, which makes of this restaurant a tribute to cuisine in the broadest sense. After an aperitif in its wine cellar with more than 700 different wines, the meal is served in the dining room where you can taste the specialities. The tour finishes in a living room where one can sit around a table surrounded by coffee, spirits and one of the largest cigar humidors in Spain.
The traditional recipes in which its cuisine is based are nuanced by Manuel's modern touch, which evidences his youth.
All this work was rewarded with a "Michelin Star" awarded in 2008, which is preserved year after year. It meant a great achievement and a great recognition.

Hugely expressive wine with a sweet touch, very floral, long and unctuous. I would definitely serve it along with a confit Lubrigante (lobster) in dill on season's mushrooms.

Wine with fruity sensations. It is fresh and meaty in the mouth and has light and integrated toasted notes. What I suggest for this wine is a dish of smoked and confit boneless "Cacheira de Porco Celta"(Celtic pig's head).
