Characteristics of Raimat Brut Nature

Exclusively from selected grapes from the vineyards of Raimat. Poor soils, shallow, 40-90 cm, coarse-textured, clay loam. Maintain a vegetative cover of native species to promote the biological richness of the soil, prevent erosion and compaction. Techniques are used to apply deficit irrigation water stress in certain vegetative stages of the cycle of the vineyard to encourage the concentration of aromas and flavors.

Sight Straw yellow with medium intensity green hues.
Nose Fresh grapefruit aromas and floral notes complemented with creamy sweet scents. Taste Flavor fresh grapefruit flavor that brings liveliness. Creaminess derived from its contact with the yeast. In final clean citric acidity and persistent.

Winery Raimat

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
