Characteristics of Rafael Sala Ancestral Xarel·lo

Rafael Sala Ancestral Xarel.lo is a sparkling wine produced by Rafael Sala in Olivella, Barcelona in the D.O. Penedès. Rafael Sala is a strong promoter of producing sparkling wines using the Ancestral method in the Penedés.

The philosophy of this type of sparkling wine is somewhat different to those made using the traditional (champagne) method, which is used to produce cava. This begins at the moment of the harvest, with no sugar added during the second fermentation, rather leaving the grapes to mature further, in this case with the Xarel.lo. The harvest is carried out manually, with the harvest left to ferment in old chestnut barrels. Before fermentation is finished, the wine is bottled which means that the C02 emitted is then integrated into the wine and thus creating the bubbles and creating a sparkling wine.

Winery Rafael Sala

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, as well as those that demostrate instrisic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used!  But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from the Penedès, since there are so many types of wines and wineries in the region. However, there is one common denominator of the wines from Penedès, and that’s balance and quality.
