Pere Mata Gran Coloma is the main cava by Pere Mata. With this cava, Pere Mata pays tribute to his grand-father, who used to elaborate this cava in his garage for the family's consumption. It is with high tender that Pere Mata remembers his grand-father's tender and passion that when elaborating this cava. This is the reason why he decided to follow in his footsteps and keep the family's tradition alive. This cava goes through a first fermentation in barrels at 16ºC for 15-20 days. The second fermentation, which takes place in the bottles, takes 60-70 days and is conducted at 14.5ºC. Pere Mata Gran Coloma is left to stand on its lees for more than three years.

Winery Mata i Coloma

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
