Characteristics of Peraj Ha'abib

Flor de Primavera Peraj Ha'abib Kosher es un vino tinto elaborado por la bodega Celler de Capçanes en la D.O. Montsant.

Celler de Capçanes es una bodega cooperativa, y toda la uva procede de fincas de los asociados. Flor de Primavera es un coupage de Garnacha (40%), Cabernet Sauvignon (40%) y Cariñena (20%). Las uvas de Garnacha proceden de cepas de 50-70 años de edad.

Flor de Primavera es un vino kosher elaborado según la Ley Hebrea, con una alta certificación, apto para la Pascua judía.
La vinificación se realiza bajo la estricta supervisión del rabino de la comunidad judía Habat de Barcelona, cumpliendo con unas condiciones estrictas de elaboración.
La edad mínima de las cepas debe ser de por lo menos 4 años y cada 7 años se dejan descansar las cepas sin ser vendimiadas. Se requieren unas condiciones estrictas de higiene, como por ejemplo un triple lavado de los tanques de acero inoxidable (la fermentación en madera no está permitida).
Ninguna persona no autorizada por la Torá puede entrar en contacto físico, incluso ni visual, con el vino. Ni siquiera el enólogo de la bodega. El rabino se convierte en las manos y los ojos del enólogo durante el proceso de intervención en la elaboración del vino.

La vendimia se realiza de forma manual.
El proceso de fermentación se realiza a temperatura controlada (24-28ºC) y la maceración se produce durante de 28 días, vivificando las variedades de manera conjunta.

Comienza la fermentación maloláctica en tanque y la finaliza en barrica. Flor de Primavera permanece 12 meses en barricas francesas kosher nuevas y de 1 año con tostado medio y ligero. Envejecimiento posterior en tanque durante 3 meses antes de embotellar.

Flor de Primavera está considerado desde hace años como uno de los mejores vinos kosher del mundo. Una verdadera maravilla.

Sight Intense picota cherry colour. Nose We find ourselves before a very complex with, with aromas of ripe fruit, minerals and toasted notes from the barrel, all delicately integrated. Taste Elegant character, full-bodied and very balanced wine with an excellent acidity.

Sight Intense dark cherry colour with purple edges. Clean and bright. Abundant and dense legs. Nose Powerful, expressive, complex and elegant. The aromas provided by the wood (toasted, smoky and balsamic) are perfectly integrated with the very ripe black fruit (blackberries). Sweet spices, coffee and licorice appear on a fresh and nice mineral background. When it opens up, it gains in intensity and expression.
Taste Large, and with a very broad and powerful attack. Very tasty, velvety and meaty mid palate. The intense and perfectly balanced notes of fruit and oak are noticed along with refined spicy notes and herbal touches. Warmth that contrasts with the freshness provided by its balanced acidity and its minerality. Ripe and creamy tannins. Immensely long and very persistent. A very elegant wine, rich and expressive, powerful and intense.

Taste Very large and powerful attack. Fleshy, very tasty and smooth mid palate. Rich notes of ripe fruit and fine toasted aromas. Creaminess. Ripe tannins. Very balanced wine with very good acidity. Very good long and persistent finish, with a sweet spicy aftertaste. A very elegantvery expressive and full-bodied wine.

Winery Celler de Capçanes

The DO Montsant is situated in the province of Tarragona, surrounding the DOQ Priorat. Although a young Denominación de Origen, The DO Monstant is located in a land with a large history in winemaking. The wines, mostly reds, are typically made with Grenache and Carignan grapes and are authentic, wild and artisanal. Wines produced in this region are usually extremely good value given the high quality.
