Characteristics of Ophiusa

Ophiusa is a VT Formentera wine produced by the Cap de Barbaria winery from Cabernet Sauvignon, Merlot, Monastrell and Fogoneu, the same grape varieties used to produce the classic Cap de Barbaria wine.
In order to produce Ophiusa, the winery looks for the optimal ripening of the grape skins and the maceration of the wine is shortened, even when the alcoholic fermentation is completed. When the fermentation is almost finished, the grapes are removed and pressed. This process is carried out in order to preserve the primary aromas of the fruit as the ageing will be shorter.
This wine is aged between 6-10 months in French oak barrels, and some of the wine is aged in stainless steel deposits in order to avoid excessive contact with the wood, and preserve the primary aromas of its ageing.

Tasting notes Ophiusa

Sight Cherry red colour with violet edge. Medium-high robe and thin tear, moderately coloured. Nose Aromas of ripe fruit, pleasant toasted hints from the ageing, fresh aromatic herbs. Soft saline nuances and notes from the terroir. Taste In the mouth, this wine is intense, large, persistent and well-structured.  Long finish, aftertaste of ripe fruit and smoked notes.

Long finish, aftertaste of ripe fruit and smoked retro-olfaction.
