Characteristics of Naverán Millesime Brut Nature

Naverán Millesime Brut Nature is a cava from Cava made by Caves Naverán. It is a blend of Macabeo (40%), Parellada (30%), Chardonnay (20%) and Xarelo (10%).

The different varieties used for Naverán Millesime Brut Nature are processed autonomously. Thus, harvesting and grape pressing for each variety is done separately.

The four varieties then undergo a low temperature fermentation in stainless steel.

The final blend is produced in November. Tirage is performed subsequently and finally Naverán Millesime Brut Nature undergoes a second aging for at least two years in the bottle, thus following the "Méthode Champenoise".

Prior to being labelled and capped, Naverán Millesime Brut Nature passes through a rinsing and disgorging process.

Tasting notes Naverán Millesime Brut Nature

Sight Pale yellow. It is bright and shows little bubbles. Nose Thin and light aromas and fruity notes of aging in bottle. Floral and spicy touches. Taste Broad and smooth, good acidity adds freshness. Long fruity aftertaste.
Sight Pale yellow and glossy, regular and smooth evolution of tiny bubbles that form a crown. Nose Very nice first impression, fine aroma and light, in addition to the side's own upbringing in bottles reminiscent fruits, spices and floral prints.
Taste Luscious mouth is full and oily, very dry and cool at once, with a balanced acidity and an elegant aftertaste, fruity and lasting.

Winery Naverán

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
