Characteristics of Naverán Brut Vintage

Naverán Brut Vintage is a cava produced by Naverán. It is a blend of 3 grapes varieties; Macabeo (50%), Xarelo (30%) and Parellada (20%).

The grapes, after having been delicately harvested, are pressed and fermented in stainless steel tanks in a low temperature. Each variety is kept seperate during this process. The three varieties are then blended and undergo a second fermentation. This lasts for 2 years and takes place in the bottle, following the methods used to make Champagne.

Before being put on the market, Naverán Brut Vintage passes through the process of, disgorging, capping and labeling.

The Naverán was founded back in 1984 but Michel Gillieron, a trained winemaker from the École d’Ingénieursnde Changins (Switzerland) who now owns the winery. Through artesan techniques and familiarity, Naverán maintains a sence of identity.

Tasting notes Naverán Brut Vintage

Sight Very pale yellow and glossy, regular release of bubbles on the surface corona starts. Nose First impression very pleasant, light and fine aromas, flavors and the very side of bottle aging in fruit and prints reminiscent of flowers. Taste Brut exquisite in mouth, full and unctuous, dry and cool at the same time, a balanced acidity and an elegant after-taste, fruity and lasting.

Winery Naverán

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
