Characteristics of Mont Marçal Extremarium Brut

Cava Brut produced of manually harvested grapes of different varieties that undergo the winemaking process separetely. After de-stemming, the grapes are cooled to 12°C and pressed in pneumatic presses. The alcoholic fermentation is performed at 14-16ºC for 12 days. After that, the blend is conducted and the resulting wine undergoes clarification and is bottled for a second fermentation and ageing during the next 20 months.

Tasting notes Mont Marçal Extremarium Brut

Sight Straw yellow colour with gold trims. Clean and bright. Fine chain of bubbles that forms a crown in the surface. Nose Intense aromatic notes. Wide range of fruit flavours, such as citrus, white fruits (apple) and tropical fruts (pineapple) on a herbal background (notes of anise) and plenty of touches of yeast and bakery. Taste Very fresh and light cava, with very well integrated carbonics in which the notes of fruit and cream take centre stage. Good persistence. A fine, elegant and refreshing champagne.

Winery Mont Marçal

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
