Characteristics of Lalama

Lalama is a red wine from the Ribeira Sacra prepared by the Dominio de Bibei winery.

Lalama is a blend in which Mencia (90%) predominates, accompanied by Brancellao and, to a lesser extent, Mouratón, Souson and Grenache (10%).

The grapes used to produce this wine comes from vineyards between 15 and 100 years old, planted at an altitude of between 300 and 700 metres above sea level and on different types of soil; slate, clay or granite.

The harvest is done manually in small boxes of 10 kg. Each variety is harvested separately. A first selection of grapes occurs in the vineyard, and a second is performed at the winery. The grapes are destemmed and each grain is selected.

Maceration takes place over two days, before starting the fermentation in French oak open barrels of 500 litres and wooden tanks. The grapes are moved manually and are removed from the vats by hand.

Subsequent malolactic fermentation occurs in barrels of 300 litres.

Lalama
is aged for 13 months in French oak barrels which have had several uses, it then spends seven months in truncated French oak and 16 months in bottle.

Lalama
not filtered, so you may find some solid residue.

Tasting notes Lalama

Sight Powerful red cherry with light violet touches and tear. Nose Upper-middle layer, fresh red fruit predominates. Spicy, mild and floral aromas. Balsamic and toasted notes. Taste Deliciously fruity and floral, long friendly taste. Very good acidity and integrated tannins. It is light and very tasty. Very well balanced finish.
Sight Pretty ruby colour with violet reflection and maroon edges. Bright and clean, medium-high robe with abundant fine tears on the glass. Nose Medium-high intensity. Fresh red fruit takes centre stage. Once oxigenated, dozens of nuances are released...spicy notes, floral touches, intense balsamic aromas, evocative aromatic herbs, subtle toasted notes along with the same red fruit, now very ripe. Nice mineral background. Taste Delicate and fresh. Silky and tasty on the palate with a very good concentration of fruit and more toasted notes than in the nose. Structured, with very good acidity, very integrated, and polished tannins. Long and persistent finish with some slightly bitter touches. Very appetising.
Sight Attractive cherry colour with intense red edges. Bright and clean wine with a medium-high robe and abundant dense tears. Nose On its expressive mineral background, juicy, intense and expressive notes of ripe fruit are noticed along with creamy toasted aromas, balsamic hints and fresh notes reminiscent of purple flowers and forest herbs. Once it opens up, some surprising citrus nuances are also released. Taste Very tasty, expressive and well structured red wine with a long, full-bodied, velvety and intense mid palate. It is warmer than in the previous vintages and its floral notes are more intense. Its juicy notes of ripe fruit are wrapped in creamy aromas on a very noticeable minerality. Marked acidity and elegant tannins. Great persistence, which leaves a pleasant aftertaste with mineral hints.  An elegant and fresh wine with a great evolution in the glass. An enjoyable wine.
Sight Cherry colour with maroon edges. Bright, with thin tears that stain the glass. Nose Wine with an Atlantic character with very expressive ripe red and black fruit. Notes of wet undergrowth and creamy toasted touches are also noticed on a subtle background of flowers, balsamics and sweet spices. A wine that gains in intensity and complexity when it opens up. Taste This wine from Dominio de Bibei has a smooth and elegant attack and a tasty, almost sweet, and velvety mid palate. It shows distinct fruity notes with a touch of milk. Its polished tannins are nicely integrated. Well structured and balanced wine with a good finish that invites to have a second helping.
Sight Cherry red. Nose Intense aroma with fruit display, with red fruit the protagonist. Taste In the mouth it presents a rich structure and acidity.

D.O. Ribeira Sacra

Winery Dominio do Bibei

The DO Ribeira Sacra is a region that perhaps paints one of the best pictures of heroic viticulture, having even been awarded recognition by CERVIM, the awarding body for this style of viticulture. The term ‘heroic viticulture’ refers to viticulture in areas that have a topography and soil conditions that complicate the work in the vineyards and make cultivating the vines and harvest a challenge. The region is home to an Atlantic climate, rivers as thermoregulatory agents, low rainfall, slate-schistose and granite soils, small sized plots and vineyards grown on steep slopes. The result is excellent wines with great personalities that truly express the dramatic and exciting nature of the landscape.
