Characteristics of La Salada L'Ermot

La Salada L’Ermot is a white wine produced by La Salada, in Pla del Penedés, Barcelona, under the D.O. Penedés. This is a personal project of Toni Carbo, a winemaker at Mas Candí, and his wife Anna.

The grapes used to produce this wine grew on vineyards planted by Toni’s grandfather, home to calcareous-clay soils. The vineyards are worked and cultivated organically, with not herbicides or pesticides used.

La Salada L’Ermot is produced exclusively with the Macabeu variety. The grapes are pressed lightly and left to ferment with their own yeasts in stainless steel tanks, where it rests with its fine lees for 5 months, with no sulphur added. 

Alcohol: 13.95%

Winery Celler La Salada

Today, the D.O Penedès is experimenting with viticulture and winemaking like no other region in Spain, home to a vast range of different grape varieties. The region is home to traditional white and red varieties, foreign ones, noble ones, as well as those that demostrate instrisic qualities. As well as the grapes, the production techniques used are also worth noting, the location of the vineyards, the yields per hectare, the wines produced using traditional, original or even exclusive blends, the different ageing times, as well as the complexity of the different barrels used!  But the reality is, given the vast diversity, it can be difficult to pinpoint what really defines a wine from the Penedès, since there are so many types of wines and wineries in the region. However, there is one common denominator of the wines from Penedès, and that’s balance and quality.
